Dark Chocolate Pomegranate Bark! 🍫
💝It's almost Valentine's Day. 💝A day focused on love and chocolate...but lets be honest, mainly chocolate🍫. And guess what? This wonder food releases endorphins which are the feel-good chemicals in the brain. When chosen properly, chocolate not only makes you happy, but can make you healthy too! It is important to pick a variety with a 70% or higher cocoa content, and is sourced using fair trade practices. Raw cacao will retain the maximum antioxidants so is always a good choice. Additionally, keep an eye on the sugar content, remember we should cap our daily sugar intake at 24g for women, 36 grams for men and 12 grams for kids. Enjoy my simple, quick chocolate recipe below!
Dark Chocolate Pomegranate Bark
ingredients
10 oz. bittersweet chocolate (Recommend brands: @alterecosf , @tazachocolate , @hukitchen@evolvedchocolate )
1 cup fresh pomegranate seeds (1 large pomegranate)
Himalayan Sea Salt
Instructions
Line a rimmed baking sheet with parchment paper
Make sure that your pomegranate seeds are bone dry. Too much moisture will cause the chocolate to seize, so dont skip this step.
Melt your chocolate in a double boiler. Once the chocolate has melted toss in your pomegranate seeds (keep a handful aside for topping) and gently toss until all the seeds are coated with the chocolate.
Scrape the chocolate mixture onto the baking sheet and spread it into an 8×10-inch rectangle. Sprinkle the remaining pomegranate seeds evenly over the top, pressing them into the chocolate. Lightly sprinkle approximately 1/4 tsp of Himalayan sea salt. Refrigerate until fully set, about 30 minutes to an hour. Break the bark into chunks with your hands (be careful not to crush the seeds), and serve.
Store in an airtight container in the fridge for up to 3 days.
